Balsamic vinegars may be relatively new to North American cuisine, but they have been treasured as a delicious culinary ingredient in Italy for hundreds of years. The unique sweet and sour flavour and the rich, thick consistency of balsamic vinegars is what makes it so special.
Aceto balsamico (as it is called in Italian) is fantastic drizzled onto many fruits, vegetables, poultry and fish. It is perfect as a salad dressing or as the main ingredient in a glaze. And it is a delicious treat when mixed with extra virgin olive oil and served with bread for dipping!
