Signature’s line of white and dark balsamic vinegars imported from Modena, Italy are the highest quality, organic products available. Our natural, additive-free reductions are made from pressed grapes that are fermented in copper pots before they are boiled down and then stored in barrels for 12-to-18 years. The longer they are left to ferment, the more intense the flavour becomes and the thicker it gets.

The combination of 100% Madagascar vanilla and Cara Cara oranges make this beautiful 12-year-aged white balsamic a true palate pleaser. Juicy, tart raspberry and luscious white balsamic come together in this bright, versatile infusion. Use it in shrubs, mixed cocktails, as glaze or make a marinade for poultry, in wilted spinach salad, over fresh cut fruit, to glaze salmon, and much, much more! Pairs well with our Garlic, Baklouti green chili, any herb or citrus infused oils, and when in doubt, the unflavoured EVOO.

The Gravenstein apple is an incredibly hard variety to find due to the difficulty farmers have cultivating it. It’s grown in pockets up the coast of Northern California and prized for its amazing ambrosia perfume, and crisp, sweet-tart cream coloured flesh. Our balsamic marries the complexity of the Gravenstein’s larger-than-life flavour with our Ultra Premium White Balsamic Vinegar for a delectable culinary symphony. Our finest grade of aged balsamic vinegar from Modena, Italy is produced in the Traditional Style. It is aged using the Solera System for up to 18 years in chestnut, oak, mulberry and ash barrels. With a 4% acidity, our Four Leaf Quality Equivalent vinegar is exceedingly rich, complex and dense. It pairs beautifully with any olive oil in our collection for vinaigrettes, glazes or marinades. Also try drizzled over ice cream or with fresh fruits and berries.
Rich and sweet, natural Black Cherry Balsamic has garnered rave reviews from our gourmet customers. This dark balsamic has character and will compliment spring mix salads and more flavorful accompaniments such as feta, goat or blue cheese. It is delicious over orange and onion Sicilian salad. Pairs with all EVOOs, but shines with the lighter varieties such as Orange and Lemon and is amazing with Roasted Almond. Serrano Honey – sulfite-free!
Made from 100% pure honey, this 2008 SOFITM Silver award-winning balsamic vinegar is a combination of sweet, tart and spicy. This handcrafted artisan product makes a great addition to salsa, ceviche, Bloody Mary’s or shrimp. Delicious drizzled over tomatoes and fresh mozzarella cheese. Add to dressings for leafy green, potato, pasta or rice salads. Toss with sliced strawberries and a grinding of black pepper for a delicious dessert. Can be used in place of traditional grape-based vinegar.
Sherry Reserva – aged 25 years
From Jerez, Spain, and made with the traditional Solera method, our Sherry Reserva wine vinegar has a true sherry flavour that can only come from cask-aging. It has no true substitute – it is loaded with complex, nutty and caramel flavours, which translate into more interesting salad dressings and incredible accents in soups and pan sauces. This fine Spanish vinegar is fabulous in reduction sauces, glazes, vinaigrettes and wherever strength and depth of flavour is desired.
