Signature’s line of white and dark balsamic vinegar blends imported from Modena, Italy, are the highest quality, organic products available. Our balsamic vinegar reductions are made from pressed grapes that are fermented in copper pots before they are boiled down (reduced) and then stored in barrels for 12-to-18 years. The longer they are left to ferment, the more intense the flavour becomes and the thicker it gets.

Made from 100% pure honey, this 2008 SOFITM Silver award-winning balsamic vinegar is a combination of sweet, tart and spicy. This handcrafted artisan product makes a great addition to salsa, ceviche, Bloody Mary’s or shrimp. Delicious drizzled over tomatoes and fresh mozzarella cheese. Add to dressings for leafy green, potato, pasta or rice salads. Toss with sliced strawberries and a grinding of black pepper for a delicious dessert. Can be used in place of traditional grape-based vinegar.

Traditional Aged Dark Balsamic
Our finest grade of aged balsamic vinegar from Modena, Italy is produced in the Traditional Style. It is aged using the Solera System for up to 18 years in chestnut, oak, mulberry and ash barrels. With a 4% acidity, our Four Leaf Quality Equivalent vinegar is exceedingly rich, complex and dense. It pairs beautifully with any olive oil in our collection for vinaigrettes, glazes or marinades. Also try drizzled over ice cream or with fresh fruits and berries.
Rich and sweet, natural Black Cherry Balsamic has garnered rave reviews from our gourmet customers. This dark balsamic has character and will compliment spring mix salads and more flavorful accompaniments such as feta, goat or blue cheese. It is delicious over orange and onion Sicilian salad. Pairs with all EVOO’s, but shines with the lighter varieties such as Orange and Lemon and is amazing with Roasted Almond. Made with natural figs and our 12-year dark balsamic vinegar from Modena. Great harmony, rich and full of fig flavour. Perfect for salads or as a marinade when paired with our Blood Orange and Eureka Lemon olive oils.
Cinnamon Pear Barrel Dark Balsamic
This delightful dark balsamic vinegar is spicy and warm. Perfect drizzled over fresh fruit or as a dessert topping. It has the unique taste of Pear, and is a great match with many of our sweeter, fruity olive oils for a delicious marinade or salad dressing. Try paired with our Butter flavored olive oil for a syrup replacement or with our Basil to amplify the Cinnamon flavor.
Lavender Dark Balsamic
Floral, sweet and slightly herbaceous, our Lavender balsamic vinegar captures the essence of this ancient flower. Pair with chicken, use in vinaigrette’s, over ice cream and with fresh fruits and berries.

This is a genuine dark balsamic vinegar of Modena, with whole fruit tangerine essence added. The blend of 12- and 18-year-old balsamic results in a lower acid level, offset by the tart citrus flavour, which makes this a customer favourite.
